Is there a way to monitor process on Linux? Something like WMI Process, but on a Linux Server? Just about if the process is runing or stoped. Is it possible?

I'm afraid this is currently not possible with PRTGs inbuilt sensors. Maybe you can do this with a self written script running as Custom Script sensor.
