MX Records are nothing that are configured in PRTG, that is something in your network and will be used when selecting "Use built-in mail server", so something might have changed in your MX records configuration. Configure the SMTP Server manually in "Setup | System Administration | Notification Delivery" alternatively to get it working again.

When something goes wrong when sending email notifications, you should find error messages in "Logs | System Events | Notifications".
