I need to monitor a directory for incoming files which are received as yyyy-mm-dd-hh-mm-ss.txt, each filename received is unique. Once they are processed the extension changes to .txt.OK, usually within a few seconds. Would like to set the file senor to look for the filename as *.txt, then trigger an alert is one was found. Is it possible to use a wildcard (i.e. * or %) in the file name under settings?

The NetworkFileCount sensor can help you out here.

From the parameter section:

-s=	 Optional the search pattern to be used (i.e. *.txt).
