If I have a core server with multiple probe's reporting back to this core server, will each probe have a unique probe ID number associated with it? Also, does each sensor within each probe have it's own unique sensor ID value or are all ping sensors the same 'ID' and all HTTP sensors the same 'ID' etc etc?

You can see each object's unique id in the browser after clicking on it:

/probenode.htm?id=123
/sensor.htm?id=456
/device.htm?id=789

Each object id is unique, there cannot be two sensors for example that have the same id. You see this ID also see on an object's "Overview" tab.

Probe's also have a so-called GID, it's not visible in the interface directly, it can be seen when opening PRTG Administration Tool on the regarding probe, on tab "Probe Settings for Core Connection". When you remove a remote probe from the device tree, it's GID will make it into "Deny GIDs" in "Setup | System Administration | Core & Probes", so it will be rejected when trying to connect.
