If I have a delta sensor monitoring a printer's page count every 10 minutes, is it possible to create a sensor that will show the sum of that sensor's volume since midnight?

Calculating the total pages per day for delta sensors is just possible by exporting the historic data every day and to perform the calculation outside of PRTG. You can receive the historic data via

  • the API: Setup > PRTG API > Historic Data
  • via reports: Here you can choose a template which supports Data Files to export it as .csv-file
