In our setup we have 1 core server and several probes in different physical networks. If the connection between one of those networks and the core server is disconnected then the probe can't send sensor results to the core.
My question is: Does the probe buffer the sensor data in any way and can this data be accessed locally on the probe via a webinterface or something similar? This would be very useful for our on-site IT colleagues to trouble shoot networking problems.

This is a question we get quite frequently. But unfortunately, the answer is no. The Probe is designed to be as small as possible, and it's only purpose is to monitor, buffer results and send them to the core.
If we implemented everything a probe needs to be autonomous, we'd end up with the Core Server + Local Probe. Essentially, the probe has no knowledge of Notifications, User Accounts, Thresholds and everything else needed to have a PRTG Management Interface.
All the processing of the results, evaluation and alerting is done by the Core Server, so there's no way to give users on a remote location access to the Probe to review monitoring data I'm afraid. It is simply not designed for that.
Depending on the scenario, it may make sense to deploy smaller core servers (one per location). This way, the local IT will always have access to the Web-Interface. And if anyone else (for instance, from a central office) need to check the status of the branch, they simply access the branch's PRTG interface.
