Is it possible to setup sensors to determine how much of our network bandwidth is going to streaming services such as youtube, netflix, hulu, etc?

PRTG supports monitoring via Packet Sniffing, flow and similar techniques (see this article) but PRTG is not an "Internet audit/monitoring solution" as a proxy or Firewall would be.
PRTG will also only go down to Layer 4 and identify protocols and destinations within traffic, but will not identify URL's and applications.
As an Unified Monitoring Solution PRTG is designed to monitor your network's devices for uptime/performance and connectivity but although it can monitor flow and some other traffic sources it is not a full scale internet URL/user audit and monitoring solution.
I'm sorry that I can't offer you a more satisfactory answer.
