Just after some guidance with a setup. We have some Windows laptops in our fleet that run off a non-vpn celular service. They never come into the office and the IP isn't static, but we would like to monitor their uptime and the like.
Is there something like a lightweight probe we could use?

It is not mandatory that the Notebook connects to the Network the Core Server is located in. If you configure the PRTG Core Server to be public available via HTTP/HTTPS, an on the Notebook installed Remote Probe will be able to connect to the Core Server.
Publishing your Core Server will entirely depend on your configuration of the used Firewalls/Network. A probable way of doing this would be using NAT rules (port forwarding).
