My devices are showing (Exchange Servers) next to them, not sure why ?

is this in the Name of the devices and are you using auto discovery? Then it could be the "template" what's used for this "device". This could be an "exchange server"-template also if it's not an exchange server. Why, I don't know, but for me this is not the problem. You can edit the name and change it your way.
It is not responsible to the sensors itself. They will only activate sensors who are useful for this device.
