We would like to seek assistance with the issue we encountered with sFlow. As seen on the screenshot below, you will notice that the top connection has 105 Gbyte which is impossible to reach in a span of 15 minutes, also, please note that this sensor is filtered to collect data from our proxies only, you may notice that the source/destination port is Port 8080. Any assistance would be greatly appreciated. Thank you.   The filter parameter I used was "OR"

Is it possible to reach 105gb in a span of 15minutes?

Have you checked to see with the sFlow tester what is being delivered to PRTG with the flows? It may be that the sFlows being sent to PRTG are incorrect.
