Is it possible to edit the menu items that user can see? For example, when a user logs in I don't want them to see anything other than the list of sensors they have access to, and a couple reports that were created for that user. I don't want them to know any other menu items exist at all.

It's possible to have another user limited to the sensors you want them to see by creating a user group and only assigning them access to specific sensors and reports but unfortunately they will still be able to see the device tree. You can also make them a read-only user as well so that they cannot touch any settings.
