I'd like to remove or add channels from/to the probe health sensor. How can I do that ?

for non-custom or non-"Sensor Factory Sensors", it's only possible to enable/disable channels from being displayed in graphs and/or tables. This can be done on the Channels-tab of the particular sensor.
