You should be able to monitor every server with this sensor. If your system can connect to the server using a softphone, it should also support the sensor. The sensor uses an Options Ping. This is the same mechanism every softphone uses to determine if the sip server supports all features, the phone needs to operate.
If you can connect to a sip server with a softphone from your system, you should also be able to monitor the server with our sensor, too.
As sip works with udp, please make sure to configure your firewall / router to allow incoming udp telegrams.
