I have two systems, one at home and one at a small charity I help with (both free versions). Each has a core server. I would like too remove the core server at the Charity and run that PC as a remote probe only, connected across the internet to my home core server. How can I convert from a full install to just probe, maintaining the devices and sensor config (not bothered about sensor history and I can handle the comms part)

Regarding your request, I'm afraid that there is no solution to simply convert a Core server to a remote probe, as all the objects (sensors/devices/groups, etc.) are stored inside the configuration file of the server and can't be extracted.
For the installation of the remote probe, you will first have to uninstall PRTG and reboot the server. Then, you can download and install the probe installer from the Core server left, under Setup > Optional Downloads > Remote Probe Installer (/downloads.htm?tabid=3).
