Is it possible to edit the SNMP Traffic sensor or create something else to have monitoring on configured/negociated interfaces speed (10, 100, 1000 Mbps)?

I know it's possible to create a custom sensor with ifspeed like this :

but simply adding it to SNMP Traffic sensor would be way better. Adding a custom sensor would mean maybe using 2 sensors (1 for the negociated speed and 1 for the actual traffic speed) for a single interface.

We don't offer a solution to change the SNMP Traffic sensor on your side. Currently you only have the opportunity to create a script which can check the desired values.

What do you mean by a script? I tried to create a custom lib sensor but it doesn't come out clean like the basic snmp traffic sensor.

You need to create a script which can show you the desired information. Afterwards, you can use this script in your PRTG instance with a EXE/Script Advanced sensor.
