We use PRTG to monitor network devices and backhaul links but we would like to monitor all the way down to individual devices attached to each switch. Everything I've read about PRTG says that its not do able, however a workaround would be to label each switch port individually and send SNMP packets to see if its detecting a MAC address on it. Is this possible? And how or what would be the easiest way to implement this.

I don't know if this is possible, since this depends on the information which are accessible via SNMP. Therefore, you need to contact the vendor of the switch for the MIB files. As long as you have a OID, you can use a SNMP Custom Sensor to query the OID.
