Has anyone trie to monitor the available licenses on an RDS Licensing server or have recommendations on how to achieve that?

You can start with this here, Get-RDSLicenseConfiguration cmdlet for PowerShell.
If that gets you what you need, you can use the PRTG API to structure the output into the format PRTG needs for a custom sensor.
