I want to be able to stop notifications for the probe server when installing updates, what is the best way to achieve this?

Hello,
PRTG isn't storing whether a notification has been sent for any particular sensor already and therefore will sent the notification again after rebooting the PRTG server to ensure you will get notified for every alarm. This is by design, as the sensor state or sensors message could have changed during the reboot.
In order to stop notifications, you can either pause your notification templates or acknowledge the alarms.
