i doesn't seem to be possible to create custom field/properties for a device ? - will that be something that's being considered
Scenario's adding server purchase date, warranty/carepack expiry date etc And then be able to run reports on these fields

You are right, it is not possible to add custom fields to a device/sensor. Unfortunately, currently there are no plans to include this feature in PRTG.
I you would like to have this implemented in PRTG, you can create a Feature Request so that other users can vote for it.
