We are looking into creating a weekly report of what sensors went down in the week and were then corrected, is something like this possible at all?
Thanks!

Sorry, there's no report template that filters by sensors states.
But normal reports with data-tables have a part called "Sensor Status History" so you can see for the sensors when a sensor was down/up/etc.
When creating a Report, under "Basic Report Settings" you can find all available Report Templates.
It is also possible to modify Report Templates: https://helpdesk.paessler.com/en/support/solutions/articles/263
However, please note that it's not officially supported to customize reports on your own.
For more options for retrieving historic data from PRTG, you might want to try using PRTG API: https://helpdesk.paessler.com/en/support/solutions/articles/76000041685
