Can you explain to me why, at the moment the maintenance license has expired, all of a sudden, prtg.exe is put to use all the resources CPU when he had never done it before with the same quantity of sensor?

This doesn't have anything to do with the license being expired. We're currently seeing that very issue with a bunch of Windows updates being installed, namely the following:
Are either of them installed on your PRTG Server or a Remote Probe? If so, uninstalling should reduce the CPU load after a restart.
