I want to try Node Red to monitor a PLC. I've installed a remote probe on a PC on the PLC network. Do I need to install Node Red on the main PRTG PC, on the remote probe PC, or both?

Node Red does not need to be installed on the same system as PRTG (core or probe), it is only required that you are able to reach the PRTG server (core or probe) so that it can send data to it. For more details on how to use Node Red please see this article.
