How does the info get back to the Server? Is this a client based setup where the client sends info back to the server or does the server query everything? Can PRTG be setup to monitor a customer system through the internet?

On the probe, PRTG performs the actual monitoring via the sensors that you created on a device (for example, a computer, a router, a server, a firewall, and more). The probe receives its configuration from the PRTG core server, runs the monitoring processes, and delivers monitoring results back to the PRTG core server.

So the probes cannot be setup to run on a local schedule and report at that time?

Probes do not "run", they have devices > these devices have sensors, you configure a scanning interval on sensor so that it queries the devices.

You can either see the status of the sensors on the Web UI, desktop or mobile clients or schedule reports to get emails.

You can also configure notification triggers based on sensor status(warning, down for example).
