Is it still possible to monitor the length of a JSON array with the new Rest Custom v2 sensor?

I know it is possible within the Rest Custom Sensor (v1?) with a template and the len() function as value: "value": len($.*),

Is there a way to do the same with the Rest Custom v2 Sensor? https://www.paessler.com/manuals/prtg/rest_custom_v2_sensor

This is not possible yet. However this sensor is still in BETA status which means that this sensor might be changed and support this in future.
