Based on my research I couldn't find a native sensor for Microsoft Defender monitoring but here's a similar request: https://helpdesk.paessler.com/en/support/solutions/articles/87601-monitoring-windows-defender-with-prtg
There is a suggestion of using EXE/Custom script sensor but as mentioned there is no native sensor for MS Defender.
