I have successfully setup email through a relay, I can test it just fine. However when I trigger any sensors, the logs say it sent an email however I don't get them. Any idea on why that would occur?

If you have no issues when testing under Setup -> Notification Delivery -> SMTP Delivery, then I would suggest you check your notification template. Try entering a recipient email address manually under "Send e-mail" option.
