Apologies, I couldn't find this in the documentation, but what happens to the Web Interface in the event of a primary node failure and the failover node takes over? Would we need to manually change external DNS to point to the external IP of the failover node?

Regarding your question, if both servers are located on different sites I'm afraid that you will indeed have to modify the DNS name to have access to the failover. However, as the failover takes over the role of master for a short time only (usually), it is not a sustainable solution.
To always keep an access to PRTG no matter where the servers are, you would need a kind of failover which will distribute the traffic to the Master server first, and then to the failover node in case the first one fails. This way, you would not have any manual effort to do.
