I have successfully connected PRTG to ServiceNow Event Management and can see the events. I am not getting are the fields I want from PRTG. Do you have any documentation that you can provide me on pulling additional fields into ServiceNow how I can create incidents by PRTG tags or etc...

From the PRTG perspective most of the configuration is performed in ServiceNow. PRTG just answers the information that ServiceNow is asking. What other fields are you trying to get from PRTG? Have you checked this ServiceNow integration with PRTG guide in their documentation?
