Is there a max number of sensors that a remote probe can have?
I have read from a previous post that 40K sensors with the remote probe at 4core and 16 gigs.
At this time we are not planning anything that big but I would like to know if anyone has a rule of thumb.

I invite you to have a look at our system requirements regarding the configuration required for the remote probes: https://www.paessler.com/prtg/requirements#remote-probes.
Please, note that such number of sensors is not supported for both remote probe and Core server. We also do not recommend to have more than 10000 sensors on a single core.
