I would like to use this monitoring product to look at source IP bandwidth usage on a monthly basis for billing purposes.

We have many customers sharing the same internet connection. I would like to report usage by customer (source IP) for a month's worth of data.

I can see the information I'm looking for in the real-time live report. I would like to extend that view to cover 30 days. or Is there a report that will use the data being captured and give me a similar list by IP for the desired time period?

in that case it will be better to use Custom Flow/Sniffer Sensors or normal Flow Sensors and then filter for the IPs generating the traffic, because the Toplist-Data cannot be reported.
