I have a sensor for an IMAP mailbox counting the emails once a hour. I'd like to get an alert, if the number of emails keeps raising for lets say the last 3 hours. Is this possible and how to configure?

Unfortunately, that is not possible. But you can set limits in the channel settings to get an error in case the emails exceed your set limit/threshold.
