This seems like is SHOULD be possible, but I have no idea how to do it. I assume some sort of custom HTML would be needed to define the filter, etc.

Hi, it sounds like you are looking to combine sensor data from other sensors into a single sensor with a graph.
You need to look into the Sensor Factory sensor. With this, you can combine multiple different sensor channels into a single sensor, and get the graphing for it. You can also get those as a table map object.
