Occasionally the ping test shows a high ping and sends an alarm. I am unsure of if it possible to only have the alarm be sent after three or so consecutive failures on the part of the ping test, for example. If this can be crafted as such, please let me know.

In your Ping sensor's notification trigger settings, use the Latency setting. This delays notifying. Only if the defined sensor state or limit still exists after the latency time has expired, a notification will be triggered.

For example, set the latency time to a value three times as high as your sensor's scanning interval.

Hello!

My question is regarding to this situation: I understand the latency setting, and it's useful. However what can I do if I would like to skip the error statuses on the console also? I mean I would like to have the sensor error status be shown on the console e.g. when the error limit breaches 3 times.

Is it possible?

Unfortunately not. The setting is only for triggering actual notifications. The EC works differently as it will always show all errors.
