I just installed PRTG and this is what it looks like by default. I did play around with it a bit, paused objects that are powered off (laptops), etc.
How do I clean this up and organize it?
I'd like to do things like 'workstations' and 'servers' - 'critical servers' such as Active Directory, DHCP, Exchange, etc.
It seems as if the local probe controls everything... everything is dependent going UP and it is too confusing...
I'd like to re-arrange everything with proper names... maybe location, etc.
This is a home environment.

You are right. The Local Probe is basically the main object of your current device tree. I understand that the first view might look overwhelming, however you are able to re-arrange the device tree according to your needs. Please check the corresponding manual pages and web sites which will help you to understand the structure of the device tree and how to adjust the view:
