Wanting to know is there any way to download and install new sensors - like Visio stencils for more current and specific pieces of equipment such as Nexus 9K switches? Also want to know how can I tell easily which sensors are snmp v3 capable? We are looking to start using SNMP v3, but wondering if there enough sensors to configure on the hardware side.

As, for SNMP V3, except for the SNMP Trap Receiver, all other SNMP Sensors in PRTG are SNMP V3 compatible.
