It would be GREAT if we could send sensor messages to a Syslog server that does. As far as I know only when notifications are triggered can we send to Syslog.
Is this correct?

You want all sensor messages sent to syslog? I don't know that it easily supports such a configuration. Can the appliance(s) you are monitoring send to a syslog collector themselves? I'm sorry. I know this doesn't answer your question but in order to be useful to the PRTG KB community, I need some reputation so I thought I'd attempt to get this conversation going.
