A client is complaining that PRTG is sending several messages per minute, and they want to send only one each 5 min. How can we set it up?

The IMAP Roundtrip Sensor will send one email during a scanning interval. You can enter the settings of this sensor and raise the scanning interval to 300 seconds to just send one email every 5 minutes.
You can identify the roundtrip emails by the subject of the email. If the notifications to your customers are sent because a threshold was exceeded or an error / warning condition was fulfilled, you can check the notification log files within PRTG: Logs > System Events > Notifications.
